The Canberra Distillery hand-crafts this small-batch gin in Mitchell, ACT, infusing it with French Earl Grey tea, bergamot and lavender alongside botanicals like hibiscus, elderflower and chamomile. It's coloured naturally with butterfly pea flower — giving it a deep violet hue — and it's collected award after award, including silver at the San Francisco World Spirits Competition and bronze at the Australian Distilled Spirits Awards. Cold infusion preserves the volatile aromatic compounds in elderflower that heat destroys. The result is elderflower with depth — honeyed, floral, complex — instead of the one-dimensional sweetness of cordials.
