Why Canberra Distillery French Earl Grey.

The Canberra Distillery hand-crafts this small-batch gin in Mitchell, ACT, infusing it with French Earl Grey tea, bergamot and lavender alongside botanicals like hibiscus, elderflower and chamomile. It's coloured naturally with butterfly pea flower — giving it a deep violet hue — and it's collected award after award, including silver at the San Francisco World Spirits Competition and bronze at the Australian Distilled Spirits Awards. A gin with this much character was designed for premium cocktails. This cocktail was designed for it.

Cold Infusion Changes Everything.

Cold infusion preserves the volatile aromatic compounds in elderflower that heat destroys. The result is elderflower with depth — honeyed, floral, complex — instead of the one-dimensional sweetness of cordials. We use The Canberra Distillery's French Earl Grey Gin — a small-batch, award-winning Australian gin handcrafted in Mitchell, ACT. It's infused with French Earl Grey tea, bergamot and lavender, alongside botanicals like hibiscus, elderflower and chamomile, and coloured naturally with butterfly pea flower, which gives it a striking deep-purple hue. That tea-and-floral character holds its own in a cocktail in a way standard London Dry gins simply can't, which is exactly why we chose it.
At 16% ABV, this is equivalent to 1.6 standard drinks per pouch — the highest in the MXTology range. To put it in context, a standard glass of wine is typically around 1.5–1.8 standard drinks. You're getting genuine gin strength in a premium cocktail format. This is not a light drink, and it tastes like it.
Cold infusion means the elderflower is extracted at low temperatures, which preserves the volatile aromatic compounds that give elderflower its distinctive honeyed, floral complexity. Heat extraction — the method used in cordials and most commercial elderflower products — destroys these delicate compounds, leaving behind a sweeter, flatter flavour. Cold-infused elderflower has significantly more depth, and it holds its character when combined with strong gin botanicals.
It's floral in the way a great gin is floral — present, identifiable, but balanced. The gin's Earl Grey, bergamot and lavender botanicals and the fresh lime citrus provide counterweight to the elderflower, and the tea note keeps the finish dry. The result is a drink that is unmistakably floral without being sweet or overpowering. Gin drinkers who appreciate botanical complexity tend to find it exactly right.
