"Tommy's Margarita was born at Tommy's Mexican Restaurant in San Francisco. Julio Bermejo swapped triple sec for pure blue agave nectar, and the cocktail world never looked back. MXTology uses Altos Blanco — the tequila Mexico's own bartenders choose — and real agave nectar. This is the margarita before it was watered down for mass market."

Altos Blanco is produced in the Los Altos highlands of Jalisco — the region known for producing agave with naturally higher sugar content and a more complex, fruity character. Patrón Spirits distributes it globally, and bartenders consistently rank it as one of the best value-for-quality tequilas available. It's the tequila that serious cocktail bars stock because it performs, not because of marketing spend.
Julio Bermejo's original insight was that triple sec — essentially orange-flavoured sugar — muddied the agave character. Blue agave nectar is sweeter than sugar but more complex, and it amplifies rather than masks the tequila. The result is a cleaner, more agave-forward Margarita that lets the spirit actually speak. Once you've tasted a Tommy's, a classic Margarita with triple sec tastes muddled by comparison.
